Mutton curry ( Mangsha Jholo)



Ingredients:

1 Mutton 500 gram
2 Potato 150 gram
3 Garlic Paste 1 tablespoon
4 Ginger Paste 1 tablespoon
5 Red chili Powder 2 tablespoon
6 Turmeric Powder 1 tablespoon
7 Cumin Powder 1 tablespoon
8 Coriander Powder 1 tablespoon
9 mustard oil 3 tablespoon
10 Sugar 1/2 tablespoon
11 Tomato 2 cup
12 Whole Garam masala 1 tablespoon
13 Onion 1 cup Slice
14 Onion Paste 1 tablespoon


Note:
Whole Garam masala is the combination of cloves, cinnamon, cardamom, bay leaf.

Preparation:
  1. In the meantime, wash and cut potatoes into big pieces. Pan fry them lightly in oil and set aside.


  1. Mutton and drain water. Put 1 teaspoon salt on it & marinade for 30 min.
  
  1. Now heat oil in a frying pan, add whole garam masala, add little sugar to turn the slightly brown color, add the ground onion paste and saute till the onion paste looks darker in color.




  
  1. Then add garlic paste and saute them. Cook for another 15 min in medium flame.
     
  1. Add garlic paste and cook the masala more.Cook till the masala color changes to a darker shade. Add the soaked red.Chilli powder,Cumin Powder,Coriander Powder and mix well. Add 1 teaspoon Turmeric and stir well. Cook the masala till oil starts to leave the sides. You may add little water to the masala when stirring so that it does not stick to the bottom of the cooking pot. When masala is fully cooked.
                 
    1. Add mutton pieces and mix well. Cook with covered lid under medium flame.
                                                  
    1. Mutton will release a lot of water and cook with its own water. Occasionally stir the masala but keep the lid covered.
    2. When mutton is 70% cooked, add the tomato, potatoes and cook them.



      1. After 10 mints of cooking with potatoes, boil 4 cups of water. Add garam masala Cinnamon & Cardamom .fix the pressure cooker lid.
                                              
      1. Cook on high head for 1 whistle and then cook on low heat for about 20 min.
                                 
      1. Open the pressure cooker only after it cools down on its own.
      2. Check the tenderness of the mutton. If you require it to be softer, you could cook it for some more time.
      3. Garnish it with chopped coriander leaves.

       
         Serve hot with  Rice or Roti
