Pani Puri





Ingredients For Puri:

Ingredients For Pani:

5 Roasted Cumin seed 2 tablespoon

7 Black salt 1 tablespoon
8 Coriander leaves 2 tablespoon
9 Ginger Paste 1 tablespoon
10 Salt to taste



Ingredients For Potatoes Stuffed:

1 Boiled potatoes 4 cup Cubic
2 Onion 2 cup Chopped
3 Green chilli 2 tablespoon
4 Roasted cumin powder 1 tablespoon
5 Boiled white peas 1 cup
6 Coriander leaves 2 tablespoon Chopped
7 Salt to taste



Preparation:

HOW TO MAKE PURI:
  1. Mix sooji, maida, salt & enough water to knead a soft dough and cover the dough with a damp cloth for about 20 minutes.
  2. Divide the dough into forty equal portions and roll each portion into circles. Place each circle under damp cloth right after rolling. 





  1. Heat oil in a kadhai. Deep fry these circles, slightly pressing with a slotted spoon, until they puff up and are golden brown





  1. Place the puffed circles or puris on absorbent kitchen tissue.  Store extra puris in an air-tight container.




HOW TO MAKE PANI:
  1. Soak the tamarind in ½ cup of warm water for approximately 45 minutes. Strain out the pulp to get tamarind water.
  2. Add mint leaves, chopped coriander,   green chilli, roasted cumin powder, ginger paste . Add a little water & mix to a smooth consistency using the blender.
  3. Transfer the paste into a large bowl & add water. Now continuously mix the contents with a spoon & add black salt as well as salt.
  4. Now mix it well and refrigerate for about 2 hours to ensure proper blending.



HOW TO MAKE POTATOES STUFFING:
  1. To mashed potatoes, add chopped onion, green chili, coriander leaves, roasted cumin powder,boiled white peas & salt.
  2. Mix them well and keep aside.



SERVING PANIPURI:
  1. Poke a small hole in the center of each puri.Add small quantity of potatoes stuffed as filling.

  1. Add a little tamarind chutney.Dip in pani so that puri is filled with it & serve.
